The thing they should be worried about isn't necessarily the sick leave they didn't pay, but the up to 30 days of waiting time penalties on the final check if they don't pay it. They can be on the hook for an entire month of your pay if you're not paid out correctly. You don't have a duty to inform your employer of the law or to warn them of how penalties are assessed. So if you chose to escalate this to the government, you'd file a wage claim after termination with the DLSE for not having your wages paid. The waiting time penalties cap at 30 days and you're not required to file a wage claim immediately. You can wait the 30 days and then file it. The DLSE likes matters settled before they even go to Conference so once it's filed you can send a copy to them and offer to drop the claim if they pay in full. The DLSE will happily drop a claim if they get an email from you saying you resolved it between yourselves.
